Polish Gingerbread Cookies

350 degrees
1 Tbl cinnamon
1 Tbl ginger
1/2 Tbl nutmeg
1/2 Tbl cloves
1/2 Tbl allspice
300 grams honey
400 grams powdered sugar
4 large eggs
1 kilogram flour unbleached
10 grams baking soda 2 full teaspoons
160 grams butter 1 1/2 sticks melted and cooled
Using a blender, blend honey, powdered sugar and eggs for 15 minutes. Mix flour and spices with baking
soda in a large mixing bowl, slowly pour in honey mixture. Mix with paddle attchment until a firm dough is
formed. Wrap in plastic and age in fridge at least 1 hour to a couple days, at least overnight.
Roll to desired thickness, half if filling. Fill and seal. Bake 10 to 15 minutes, brush with sugar water solution
made by adding enough water to dissolve sugar, allow to cool. Enjoy!
