Marinara Sauce

2 Tbl Olive Oil
1/2 cup onion chopped
1/2 cup celery chopped
1/2 cup carrot chopped
1 clove garlic pressed
1 Tbl parsley crushed
1 Tbl basil crushed
1 Tbl oregano crushed
15 ounce tomato sauce
15 ounce tomato puree
1/8 cup Ouzo or wine
1 tsp fennel seed If using wine
Heat olive oil and saute onion, celery, carrots and garlic until onions are soft. Add herbs and stir. Pour in
tomato sauce and tomato puree, stir in ouzo and simmer. If it tastes a little flat add a splash of lemon juice to
brighten.
