Lillyo Carrot Cake

2 cups flour
1 tsp cinnamon
1 tsp salt
2 tsp baking soda
2 cups sugar
1 1/2 cups oil
4 eggs
1/2 tsp vanilla
3 cups Carrots grated
1/2 cup Pecans chopped
3 oz cream cheese
1 stick butter
1 tsp vanilla
2 cups powdered sugar
milk
Sift together dry ingredients, set aside. Mix together sugar and oil until well blended, add eggs and beat well.
Pour over flour mixture and stir until just incorporated. Stir in carrots, pecans and vanilla.
Pour into pans and bake 30 minutes for muffins, 40 to 50 minutes for cake.
Icing - cream together all ingredients, slowly add milk to desired consistancy.
