How to clean an artichoke: Begin by pealing off all the brown and broken leaves from the stem. With a serrated knife cut off the top of the entire artichoke to remove all the thorns, the alternative is to use scissors to cut the top of each individual leaf. Make a shallow cut all the way around the stem where it connects to the artichoke, and cut off the bottom 1/4 inch of the stem. Turn the artichoke so that the stem is up and trim off the outer 1/8 to 1/4 inch of the stem. This part is chewy. Spread apart the leaves so that water can reach the middle and rinse with water, then allow to soak in water with lemon juice as you clean the rest of the artichokes. This keeps them from turning brown. Steam in water with lemon juice until the bottom leaves peal off easily. About 20 minutes. Serve with Oil and vinegar or lemon butter.
