Italian Beef
1 can red enchilada sauce
1 can refried beans optional
tortillas taco size
pepper-jack cheese grated or sliced
1/4 inch canola oil in skillet
sour cream
lettuce shredded
Black Olives sliced
tomatoes diced
Mix meat with part of Red Enchilada Sauce. Place refried beans, meat
and cheese on a tortilla. Fold into chimichanga. Fry seam-side down
for 2 minutes in very hot oil until golden brown & turn. Drain on paper
towel. Top with choice of toppings and more sauce. Serve.
