Vegetable Stuffing

1 lb sausage
4 small zucchini sliced thin
4 small Summer Squash sliced thin
4 tbls butter
3 cups bread crumbs
1 handfull basil
1 handfull oregano
1 handfull parsley
1/2 jar capers
Olive Oil
celery leaves optional
salt & pepper

Mix bread crumbs, basil, oregano, parsley, capers and celery leaves. Add enough olive oil to moisten, so that it clumps when squeezed but breaks apart easily and is not greasy. Set aside. In large skillet, preferably cast iron, brown sausage. Remove meat but keep drippings, add butter and saute squash until soft. Season with salt and pepper. Add 2/3 of bread crumb mixture and stir in, top with remaining bread crumbs and broil until top is golden brown.
