Loaf Pan and 13x9 pan
2/3 cup sugar
2 large eggs
5 large egg yolks
1 14 oz can sweetened condensed milk
1 12 oz can evaporated milk
1/2 cup whole milk
1 1/2 Tbl vanilla
1/2 tsp salt
Stir together sugar and water in heavy bottomed sauce pan, until disolved. Bring to a boil over med heat and
cook until the sugar is the color of peanut butter, remove from heat and swirl pan until sugar is redish amber
and fragrant. Swirl in 2 Tbl warm tap water until incorporated. Pour into loaf pan and set aside.
Whisk eggs and yolks until combined, whisk in milks, vanilla and salt. Strain through fine mesh seive into
prepared pan.
Cover pan with aluminum foil and place on a tea towel in 13x9 pan. Place in preheated oven and pour boiling
water into 13x9 pan until it comes close to the top. Bake 1 1/2 to 1/3/4 hours until center is juggly and
measures 180 degrees. Shut off oven and allow to cool to room temp uncovered. Remove from water bath
and cover with plastic wrap, refridgerate overnight.
Remove from pan by running a knife around the edge and turn out onto a large platter. Slice and enjoy.
