Sausage and Potato Popover Casserole

450 Skillet
12 oz potatoes cubed
2 Tbl vegetable oil
salt & pepper
2 large eggs
1 cup milk
1 Tbl butter melted
1 cup all purpose flour 5 ounces
2 scallions sliced thin
12 ounces sausage
1 ounce parmesan grated

Peel and cube potatoes, toss with 1 tbl oil,1/4 tsp salt and a pinch of pepper and microwave 5 to 7 minutes, stir halfway through. Whisk eggs, milk, butter 1/2 tsp salt and 1/8 tsp pepper in large bowl, stir in flour and scallions until just incorporatedbut still lumpy. Heat remaining oil in nonstick skillet until shimmering, fry sausage, add drained potatoes, cover and cook stirring occasionally until potatoes are lightly brown, about 8 minutes. Pour egg mixture over top, sprinkle with cheese, baked untl puffed and golden 25-30 min.
