Mediterranean Braised Green Beans

275 Dutch Oven
5 Tbl Olive Oil
1 onion chopped fine
4 cloves garlic minced
pinch cayenne
1 1/2 cups water
1/2 tsp baking soda
1 1/2 lbs green beans
1 Tbl tomato paste
14.5 ounce tomatoes diced
1 tsp salt
1/4 tsp pepper
1/4 cup parsley fresh, chopped
red wine vinegar

Heat 3 tbl olive oil in bottom of dutch oven over medium heat until shimmering, add onion and cook until softened 3-5 minutes. Add garlic and cayenne and cook until fragrent about 30 seconds. Add water, baking soda and green beans and bring to a simmer. Reduce heat to low and cook for 10 minutes stirring occasionally. Stir in Tomato paste and tomatoes, salt and pepper. Cover and place in oven for 40 to 50 minutes until sauce is thickened and beans can be cut with a fork. Stir in parsley and season with vinegar to taste. Serve as a side or main dish with rice.
