9 cups peaches
1296 grams sugar
1 Tbl cinnamon
1/4 cup lemon juice
1/8 tsp onion powder
1/4 tsp nutmeg

blanch, peal and slice peaches, place in pan and cover with sugar. If they are dry allow to sit overnight. Add remaining ingredients and cook to jam ~ 220 degrees.
