Pink Peppermint Flamingo Meringues

parchment paper
6 egg whites
1/2 tsp cream of tarter
1 1/2 cup sugar super fine
6 Tbl sugar super fine
1 dram peppermint oil
red food coloring
1 1/2 cup heavy whipping cream
1/2 cup powdered sugar
2 drams peppermint oil
red food coloring
Preheat oven to 2oo. Beat egg whites at cream of tartar until foamy (almost soft peaks) gradually beat in 1
1/2 cups sugar, add food coloring and peppermint oil. Continue beating at high speed until meringue forms
stiff glossy peaks 20 to 35 minutes.
Pipe bodies and necks onto parchment paper lined pans. Bake 8 hours. Cool.
Whip remaining ingredients to stiff peaks and fill flamingos.
