8 quart stockpot
1 gallon whole milk
1 1/2 tsp citric acid like fruit fresh
1/2 cup water
1 tablet Junket crushed (rennet)
1/4 cup water cold
Dissolve citric acid in 1/2 cup water, and junket tablet in 1/4 cup water, set aside. Heat milk in stockpot. At 55
degrees add citric acid, at 90 degrees add junket and stir to combine. Continue cooking to 100 to 105
degrees, remove from heat and allow curd to form. When whey is clear, separate curd from whey, reserving
the whey.
Put the curds in a microwavable bowl and heat 1 minute in microwave. Knead to get the cheese to the taffy
stage, heat two more times (at least) for 35 seconds, kneading after each. After third warming add 1 tsp
kosher salt and knead. Form into balls, braids or sticks, and enjoy.
