Sauce (Pasta )

Carbonara

1 ounce Parmesan grated
1 ounce romano cheese grated
1 egg beaten
1 strip bacon chopped
greens to taste

Figuring 1 egg and 1 slice of bacon per person. Make a paste from the cheeses and egg. Chop bacon and fry to a crisp. Saute greens, if desired, in bacon and fat after bacon is crisp. Cook pasta to Aldente. Toss pasta in bacon mixture, add paste and stir to cook eggs, add a little pasta water to bring sauce together.
