Best Ever Green Bean Casserole

Deep Fryer 375 degrees
2 Large onions
3/4 cups all purpose flour 250 g
1/2 cup Panko bread crumbs 150 g
1 Tbl sea salt fine
1 cup milk
3 eggs beaten
36 ounces green beans cleaned
4 Tbl butter
16 ounces mushrooms cleaned and sliced
1 tsp pepper
4 cloves garlic pressed
1/2 tsp nutmeg
5 Tbl all purpose flour
24 ounces chicken stock
2 cups half and half
2 tsp salt

Preheat ovion to 475. Slice onions very thin on a mandolin. In large bow mix together 3/4 cups flour, Panko bread crumbs and 1 tbl salt. In large bowl beat eggs into milk. Toss onions in milk and egg mixture, allow to soak for a few minutes. Remove and toss in bread crumbs and deep fry until golden brown. Blanch beans and set aside. Melt butter in a large iron skillet over med-high heat. Add mushrooms, remaining salt and pepper. Cook, stirring occasionally until mushrooms begin to give up some of their liquid, 4 to 5 minutes. Sprinkle remaining flour over mixture and stir to combine (forms a roux) cook for 1 minute, add broth and simmer 1 minute longer. Decrease heat to med low, add half and half, cook until thickened, 6 to 8 minutes. Remove from heat, stir in 1/4 of the baked onions and all the beans. Top with remaining onions and bake until bubbly about 15 minutes.
