1 cup all purpose flour 158 g
1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp sugar
2 eggs separated
1 cups milk 250 ml
2+ Tbl butter melted
fillings of your choice
Whisk together four, baking powder, salt and sugar. In a separate bowl whisk egg yolks then whisk in milk
and melted butter. Whisk the wet into the dry, it will be lumpy. Whip eggwhites to stiff peaks and fold into
batter in 2 batches.
Butter each well with 1/4 tsp butter, set over medium heat. Add 1 Tbl batter to each well, 1 tsp filling and top
with 1 more Tbl batter (putting batter in a squeeze bottle works really well). Cook until bubble appear and
edges begin to dry, then flip with 2 skewers. Cook a couple minutes longer. Top as desired and serve.
