Salt Roasted Potatoes

4 Potatoes Russet
2.25 cups salt Kosher
Preheat oven to 450 degrees. Line bottom of 13 x 9 baking dish with salt and nestle potatoes broad side
down into it. Cover with aluminum foil and bake for 1 hour and 15 minutes.
Increase oven temp to 500 degrees.
Remove the foil, brush with butter and bake for another 15 to 20 minutes, until skins are glossy.
Serve with favorite toppings.
