red beets
Peel and cut up red beets into chunks. Mix water, vinegar, sugar, salt, onion, cloves, mustard seeds, celery
salt and pepper to a boil and boil 3 minutes. Add red beets (red food coloring optional if desired) and cook
for an additional 3 minutes. Put in hot jars and seal immediately.
