Biscochitos (Bis ca she toes)

8 - 10 minutes Pre-heat oven to 350 cookie sheet
1 1/2 cup sugar
1 lb lard
2 eggs
3/4 cup wine or brandy Apple Brandy
3 tsp baking powder
1 tsp salt
2 tsp anise seed
6 cups flour
1/2 cup sugar
1 tsp cinnamon

Cream lard; add sugar and cream well. Add eggs & anise. Sift dry ingredients together and add to mixture. Add wine. Roll out on floured board, until quite thin, and cut into desired shapes. Sprinkle with sugar and cinnamon mixture. Bake at 350 degree oven until light brown. 8-10 minutes. Cut by hand or use a cookie cutter. If cutting by hand, cut into slanted squares and feather the edges with the tip of a knife. They should look like a little serape (Mexican blanket).
