Chinese Pork

1 lb mushrooms fresh
2 lbs pork boneless
4 Tbl vegetable oil
2 cups celery sliced
1 can chicken broth
1 1/2 tsp salt
1 package snow peas frozen
3 Tbl cornstarch
1/3 cup water cold
2 Tbl dry sherry
2 1/2 tsp soy sauce
1/2 tsp sugar
1/2 tsp ginger
rice
eggs beaten

Cut pork in 1/2 inch strips. Cook pork in water about 20 minutes. Drain. Coat with 2 tablespoons soy sauce, roll in flour, then beaten egg, & again in flour. Set aside. Heat 2 Tablespoons oil in Wok. Add pork, sauté 3 - 4 minutes. Remove from Wok. Heat 2 Tablespoons oil in Wok, add mushrooms, celery, salt and sauté 2 - 3 minutes. Add broth & pea pods. Cover and cook 2 minutes longer. Blend corn starch with water, sherry, soy sauce, ginger, sugar, and stir into mixture. Add meat and bring to boil. Reduce heat, cook until thickened about 4 minutes. Serve over Chinese noodles, rice or both. Can add water chestnuts if desired.
